The Dairy
Our Dairy is a kind of magical laboratory where litres and litres of milk enter and cheeses of all kinds, fresh or mature, yoghurt, butter and ricotta emerge.
The job of the "cheesemaker" is certainly not an easy one: the day begins while everyone is asleep and goes on for hours until the sun rises on the horizon and everyone else wakes up.
Our Farm has its own cheesemakers: one has been working with us since we started making cheese; the second is the future, who has always had a passion for this craft and, despite his very young age, is already specialised
in cheese-making demonstrations to children and adults for our Educational Farm and during the festivals and the Agriculture Festival in Caderzone Terme.
Cheesemaking can be watched on request and the astonishment of the guests is truly amazing when they see the white stream of milk become cheese.
After all, sometimes city life doesn't give you the opportunity to appreciate the cheese, butter or yoghurt that bought in supermarkets arrives on your table.
